Blueberry French Toast

Blueberry French Toast Bake

French Toast:
1 loaf day-old French bread, crusts removed
2 (8 oz.) packages light cream cheese
1-2 c. fresh or frozen blueberries
12 eggs
2 c. milk
1/3 c. maple syrup

Sauce:
1/2 c. sugar
1 T. cornstarch
1 c. water
2 c. fresh or frozen blueberries

1. Cut the bread into 1″ cubes. Place half in a 9×13 (or other shallow 4ish quart baking dish) dish coated with cooking spray. Cut cream cheese into 1″ cubes. Place over bread. Top with blueberries and remaining bread.
2. In a large bowl, beat the eggs and add the milk and syrup; mix well. Pour over the bread mixture. Cover and chill for 8 hours or overnight.
3. Remove from fridge 30 minutes before baking. Cover and bake at 350 for 30 minutes. Uncover and bake for 25-30 minutes or until golden brown and the center is set.
4. Sauce: In a saucepan, combine the sugar and cornstarch. Add water. Bring to a boil over medium heat; boil for 3 minutes, stirring constantly. Stir in blueberries; reduce heat. Simmer for 8-10 minutes or until the berries have burst. Serve over French toast.

Jewel NEW Program **Your Bucks Catalina**

Go here to register your Jewel Preferred card. They have special catalina deals until 5/4/2010. It kinda works like Wags RR's. If you purchase the specific item on the list (you will see this after you register your card) you will receive a catalina for it.
The nice thing is with Jewel you can roll the catalinas, meaning you can use the same cat to purchase the same item and a new cat will print.
Please NOTE there is a 36 hour waiting period for your card to become activated.
You will receive the catalina at the top 3 stores you shop at the most in the past 52 weeks.
Limit 1 per transaction! You will receive one 1 cat per item purchased per transaction.
I would recommend rotating cards if you have more than one.

Jewel freezer deal

Got my freezer this morning at jewel. There are some pretty good free food coupons that came with it. It's a descent size but I highly recommend letting it sit for about 24 hrs before plugging it in. They wouldn't let me use any coupons with it. Oh well.... I turned around and bought some groceries instead and used my RRs.
